It was as pleasant a day as I have ever spent.

I have ever 之类的一般与最高级用在一块,这里为何与 as...as 一块用。

为便于理解:可以在第二个 as 后补上 any 或是 any day。即:

It was as pleasant a day as any (day) I have ever spent.

You’ve worked as hard as any people I’ve ever seen.

The speech was as poetically written as any he’d ever heard.

These mangoes, bananas, pineapples, pears, and grapes are as delicious as any I have ever eaten.

It was as pleasant a day as any (day) I have ever spent.

It was as pleasant a day as I have ever spent. 其中的 as I have ever spent 是定语从句,修饰 先行词 a day。

It was as pleasant a day as any (day) I have ever spent. 其中的 I have ever spent 是定语从句,修饰先行词 any day。
