如果不考虑习惯，仅从语法角度考虑是可以的。这时正如你理解的那样，unveiled 变为过去分词作后置定语修饰前面的名词短语。

解答：that/which Oppo unveiled last week为定语从句修饰前面名词“the Find N”, 如果改为 Find N of Oppo,语义会发生改变。所以不能改为介词of的介词短语作后置定语，只能使用定语从句作定语。
