按理说用前面用的是逗号，而且前面已经有主句了，这里的said应该用saying才对的啊？这里怎么理解这个句子结构？

看下面示例：

Tom said that John was an honest man. 间接引语作宾语从句，Tom said这个引述分句作主句。

John was an honest man, Tom said. 间接引语作了主句，Tom said 这个引述分句作为插入语。这种结构称为自由间接引语。

你的这个句子中，逗号后为引述分句作插入语, 逗号前为自由间接引语作主句。整个句子为自由间接引语结构。

另外，过去式为主动意义，及物动词的过去分词为被动意义。你的句子中said显然是主动意义，排除过去分词。

句意不变，把它调整一下顺序：A fishery expert said on Monday (that) an Indonesia fisherman has(应该用had吧) caught a coelacanth, an ancient fish once thought to have become extinct at the time of the dinosaurs.

这是个省略掉了that的宾语从句，said是主句的谓语动词，不能用非谓语动词saying，an ancient fish......是coelacanth的同位语，对它进行了解释说明。
