a piece of fruit 通常是表示“一个水果”。比如下面例子中的 piece 肯定是表示“个”：

a piece of fruit (= an apple, an orange, etc.) 一个水果（牛津）

但在某些特定语境中它也可以表示“一片水果”，比如下面例子中的 piece 应该是表示“片”：
