你把句子结构理解错了。这是such...that结构。such是表语，为了强调而前置于句首，is倒装。不倒装的句子是这样的：Human nature is such that people don’t cherish the things they have until they lose it. that从句是结果状语。

这道选择题可能答案不唯一。
选择such的理由参见曹老师的讲解，不过这里的语境似乎不能排除选择it——it做形式主语，that引导主语从句。下面举几个例子：
It’s human nature that parents should be frightfully fond of their children. （张道真，《现代英语用法词典》）
It is just human nature that we want to be validated and acknowledged for a job well done.
... it is human nature that people scream when they are hurt ...
But it’s human nature that people-male or female-will do what they are allowed to get away with.
