1、 Such is human nature, that a great many people are often willing to sacrifice higher pay for the privilege of becoming white-collar workers.
此句中，such 为代词，指代前面提到的，如人们喜欢做白领的心态，也许是出于虚荣或面子等原因。 that 引导结果状语从句。that =so that.
2.The conditions of society are such that skills have to be paid for in the same way that goods are paid for at a shop. Everyone has something to sell.
此句中，朗文词典解释such 为代词， 但the free dictionary 解释为形容词。such that 是一种惯用句型，引导结果状语从句。such 指程度。你的两个句子的such that 用法不完全一样。第一句的such 是代词，和后面的that可以分离，而第二句的such that 是固定表达，不可分开。
