少见则多怪。that在非正式语体可以用作程度副词，修饰形容词或副词。所以 I was that hungry是没有问题的，问题是that hungry是否可以后接结果状语从句。我在COCA语料库找到类似例句，说明that+形容词+结果状语从句是可以用的，只是不如so+形容词+（that）结果状语从句常见罢了。通常语法书的例句不会是作者随便编写的，通常都是有出处的，所以不应该随意质疑语法书例句的正确性。下面是COCA例句：
