这几个句子都是with复合结构作状语。with复合结构即介词with+宾语+宾补。系词be的现在分词通常是不用来作宾补的，而是直接用系词be的表语作宾补。所以你的上述几个句子中都不应该加being的。除非being+过去分词表示现在分词被动语态，即一个被动动作正在发生，being是助动词be的现在分词，则being是不可以省略的。

你的加being的几个句子，除了with a book being in his hand（不太符合惯用表达）和with the light being burning 属于明显错误，其他几句不错，但不简练。只有在强调这种状态时才可以这样用，通常没必要这么用。

这几句的being都是现在分词，with a book being in his hand, 在这种句式中，英语习惯上不用现在分词being+起状语作用的介词短语形式（形容词可以），因此being 是多余的。（我说不出来依据，语感如此，不能百分之百确定我的判断是否准确，但印象里不记得见过这样的句子，看着别扭）另一句的being burning 属于错误，因为不能连续出现两个现在分词。
