用一个简单的句子说明这个问题。

I didn't go to bed until 2 am. 我凌晨2点才睡觉。not...until: 直到...才...。这种结构强调谓语动作发生的晚（动作发生之前有相当一段时间）。

Not until 2 am did I go to bed. 意思同上。not until...前置，句子部分倒装。

It was not until 2 am that I went to bed. 意思同上。采用强调句型，强调时间状语。

以上三个句型意思相同，只是对时间状态的强调程度不同而已。

所以你的句子仍然是直到...才... 的意思。翻译的时候可以灵活。“ 我进入公司后才意识到 ... "

It wasn't until noon that she finished lunch. 这个句子是你自己编写的吧。这个句子反映出你没有理解这种结构的意义。not...until...结构强调谓语动作发生的比预期的要晚，在动作发生前很长一段时间过去了。可你的句子中午12点就吃完了午饭，一点都不晚。是不可以使用这个结构的，是对这种结构的曲解。直接说 I finished lunch at noon.即可。
