说what=that which/the thing that.

What remains (=That which remains) in our memories is his courage and undauntedness.

好像记得语法网老师说过：复合关系代词what=the thing which 或 the thing that，但为什么书上说=that which呢？

这个例句What remains (=That which remains)这里对吗？

这个句子是正确的。但是，That which 通常只用于十分正式的语体中，也常见于某些谚语中。如：

That which is evil is soon learned. （谚语）坏事易学。
