all 可以修饰复数名词，不可数名词，还可以修饰单数名词，例如：

《韦氏词典》例句：

He stayed awake all night. [=the whole/entire night]
She worked hard all day. [=throughout the entire day]
I've been waiting all week to see her.

this 指代前文提及的一件事，而不是几件事，所以没有理由用all these.
