为什么这里不能用if...not=“如果不“来代替呢？即为什么B不可以呢？选B，翻译也很通顺啊。

这个问题不在连词 if not 和 unless 的区别上面，而是在于 would like to do 和 like to do 的差异。

前者表示“愿意；想要”；后者表示“喜欢”。本句是说“你愿不愿意”，不是“你喜欢不喜欢”。

if you don’t like to sleep in Number 7. 如果你不喜欢睡在7号房间。

unless you’d like to sleep in Number 7. 除非你想睡7号房间。

like to do sth: 喜欢做某事。

would like to do sth. 想要做某事。

本句的语境是想住某个房间，而不是喜欢住某个房间。所以不能用like to do.
