what 是“融合性关系代词”。它引导宾语从句的同时，还要在从句中作成分：gain 的宾语。
what = the thing that 原句可以变为：
The beautiful is the thing that most people want to gain.
如果用了that引导这个宾语从句，那么，gain 就缺少宾语。因为that 是从属连词，不作成分，还可以省略。
